Make a fresh and light Mediterranean influenced meal using our easy to prepare Mediterranean Crusted Salmon, bacon, fresh veggies and chickpeas! Serves 4
  • 2 fillet Salmon ( Mediterranean crusted salmon fillets from LGCM recommended)
  • 4 strip Bacon ( diced)
  • 1 Red Onion ( small onion, chopped)
  • 1 Green Pepper ( chopped)
  • 1 clove Garlic ( diced)
  • 1 can Chickpeas ( 15 oz can, drained)
  • 1 cup Diced Tomatoes ( drained)
  • 1 tsp Rosemary
  • 1 tsp Oregano
  • 1 tsp Smoked Paprika

Directions

  • 1

    Preheat your oven to 375°F, place frozen Salmon fillets on a baking sheet lined in aluminum foil and sprayed with cooking spray and bake for 25 minutes.

    While the Salmon is baking, cook the bacon in a large skillet until crisp. Remove bacon with a slotted spoon.

    Add onion, garlic, and pepper to pan and cook over medium heat for 10 minutes or until soft.

  • 4

    Stir in chickpeas, tomatoes, bacon, rosemary, oregano and paprika. Cook for an additional 3 minutes until heated through.

  • 5

    Once Salmon is done cooking (it should be 165°F), remove from oven, slice in half and serve each person 1 half piece of salmon along with vegetables. Season with hot sauce to taste.
