Baked Potato and Cheese Crusted Cod
One of the great frozen seafood items available at Lake Geneva Country Meats is our Potato and Cheddar Encrusted Cod. Cod is a mild tasting fish, and the addition of the Potato and Cheddar crust make this item a real crowd pleaser and a way to introduce kids to seafood. This recipe is from Tom K., one of our great friends at Lake 96.1 FM in Lake Geneva, and it’s absolutely delicious. You have to try this easy recipe at home tonight – it only takes 20 minutes!
Thaw the frozen Cod fillets in room temperature water, or by leaving in the refrigerator overnight.
Place the fillets in a shallow baking dish, and place a lid on top.
Bake for 20 minutes at 375F.
Remove and enjoy!
