Chicken thighs are affordable, delicious and perfect to cook in your slow cooker. This easy to follow recipe will make your house smell good while it’s cooking and make you look good when your family eats the finished product! Fresh Italian herb flavors from the pesto and Italian seasoning perfectly complement the chicken thighs, and when served with toasted Italian bread and bruschetta, you have an Italian themed meal that’s hard to beat! Ingredients

  • 3 lb(s) LGCM Boneless Skinless Chicken Thighs
  • 1 jar(s) Pesto (or one tube of pesto paste)
  • 2 Tbsp Urban Accents Roma Seasoning (or other italian seasoning)
  • .25 cup(s) Chicken Broth
  • Italian Bread (toasted)
  • Bruschetta (for serving)

Directions

  1. Pour the chicken broth into the bottom of your slow cooker. Season the chicken thighs on all sides with Italian seasoning and place in the slow cooker. Add pesto on top of the thighs until the thighs are covered with a layer of pesto. Put the lid on the slow cooker and cook on high for 4 hours.Once done cooking, remove the thighs and serve. We recommend serving with toasted Italian bread and fresh bruschetta. The bruschetta can be served on top of the bread and chicken. The chicken can also be served on top of rice or pasta with your favorite tomato sauce. Enjoy!
