Enjoy a taste of summer with Heather’s Honey Dijon Citrus Grilled Chicken Salad recipe. This dressing is a Heather original, and one of her favorite dressings to serve at home! Using a freshly made citrus fruit inspired vinaigrette dressing and grilled romaine lettuce and chicken hot off the grill, this salad is a light and fresh recipe to enjoy outside with friends and family. Ingredients

  • 1 lb Chicken
  • 2 head Romaine Lettuce
  • 2 Tbsp Olive Oil
  • Cherry Tomatoes (cut in half)
  • Parmesan Cheese (shredded)
  • .75 cup Olive Oil
  • .25 cup White Wine Vinegar
  • 2 Lemon (juiced)
  • 2 Tbsp Garlic (minced)
  • 2 Tbsp Dijon Mustard
  • 2 Tbsp Honey
  • 2 Tbsp Cilantro
  • Salt
  • Pepper

Directions

  1. Grill and slice Chicken Breasts.

  2. While Chicken is grilling, mix all Honey Dijon Citrus Vinaigrette dressing ingredients together.

  3. Let dressing chill for about 30 minutes in the refrigerator.

  4. Cut your head of romaine in half length wise, and brush with olive oil.

  5. Take romaine halves and place them on a medium heat on the grill.

  6. Grill for 1-2 minutes per side until all sides are lightly browned.

  7. Place your romaine, chicken, Parmesan cheese & sliced cherry tomatoes on a plate and top with your vinaigrette dressing!
