Lori’s Prime Rib
- 1 whole prime rib roast form Lake Geneva Country Meats
- Jar of Excalibur’s Ultimate Steak and Roast Rub
Set roast on counter and bring to room temperature, about 1 hour. Preheat oven to 500 degrees. Rub roast liberally with Excalibur’s ultimate steak and roast rub. Place in shallow roasting pan uncovered. Bake for 15 minutes at 500 degrees. Turn oven down to 350 degrees and continue roasting prime rib 15 minutes per pound. Use meat thermometer. Remove roast from oven when thermometer reads at 125-130 degrees for rare. Let roast stand for 15 minutes before carving. Temperature will rise another 5 degrees while resting. Roast for 20 minutes per pound if medium rare slices are desired.
